Care and Travel Advice for Cakes

Transporting Cakes:

When transporting a cake, please keep it flat and low. The passenger foot well is ideal.

 

You can also use the boot-if it is clean & empty. [A non-slip mat is helpful, too.

Clean, rolled towels can also be used to support the base of the cake box].

Though it's tempting to keep hold of it, don't travel with it on your knee and seats are best avoided as they slope.

Caring For Your Bakes:

As my cakes are made with fresh, natural ingredients, they are at their best when eaten within 48 hours of receipt [cupcakes are best eaten on the day of collection/delivery.]

 

When stored correctly, a buttercream cake stored at room temperture and a fondant covered bake will stay moist for about 2-3 days after cutting-it may even last a week but will not be as fresh!

After cutting, wrap the exposed side of the cake with cling film and then loosely drape the rest of the cake with cling film. 

Please do not store in a plastic box.

If the weather is excessively warm, you may want to consider storing in the fridge.

However...this will dry out/harden the sponge & the fondant may develop condensation, so becoming soft & sticky; any modelling and colours may also run.

 

 

Cakes without fondant can be wrapped in cling film/stored in tins-they may become a little sticky after 48 hours but should still be moist for 2-3 days.

 

*If the cake is not to be displayed straight away it should be stored in the box, in a cool room [with the lid slightly open] away from heat sources, on a flat surface, somewhere where it will not be moved or knocked.

Uncut fondant covered cakes should not be refrigerated.

Cutting

Cakes need to be cut with care, particularly fruit cakes and carrot cakes which can crumble if not handled carefully.  Use a long bladed serrated knife, which must be sharp - ornamental cake cutting knives used for photos are usually not sharp enough.

Use a damp cloth to clean and moisten the blade between each cut - this will help stop the knife dragging on the cake crumb. Use a sawing action with the serrated blade - don't just push the knife downwards - and make sure to cut all the way to the base board.

The cake may include non-edible decorations [such as wired sugar flowers, posy picks, fresh flowers, models, internal supports, dowels etc.] which must be removed before the cake is cut and served.
